Healthy, Fresh, Tasty, Amazingly Wonderful Light Meal
Strawberry Spinach & Kale Salad with Seared Tuna & Balsamic Vinaigrette
Ingredients
- Mixed Baby Spinach and Baby Kale
- Sliced Strawberries
- Feta Cheese
- Tuna Steak
- 2 tbsp Olive Oil
- 1 tbsp Sesame Oil
- 1 tbsp Lemon Juice
- 1 tbsp Soy Sauce
- Sea Salt
- Freshly Ground Black Pepper
- Balsamic Vinaigrette
Steps
- Marinate the tuna for at least an hour in the oils, lemon juice, and soy sauce.
- Heat pan with a glug of olive oil on high heat.
- Season the tuna with salt and freshly ground black pepper.
- Sear tuna on both sides for 2-3 minutes (depending on thickness), and dump the marinade into the pan while searing.
- Remove tuna when done cooking and set aside.
- Assemble plate with spinach and kale, sliced strawberries, and feta cheese.
- Slice the cooked tuna and set on top of salad.
- Drizzle with balsamic vinaigrette and enjoy!
- You can also include roasted pine nuts if you like nuts in your salad!
