Basil Garlic Butter Salmon

Ingredients
  

  • 1 tbsp garlic powder
  • 1 tbsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil
  • 1 tbsp minced garlic (~2 cloves)
  • 4 6 ounce skinless salmon fillets
  • 6 tbsp salted butter
  • 1 tbsp lemon juice

Instructions
 

  • Sprinkle both sides of salmon with salt, garlic powder, basil, and pepper.
  • Heat oil in large non-stick skillet over medium-high heat. Add salmon, presentation side (curved side) down, and cook for 3 minutes until golden.
  • Flip salmon and cook the other side for 1 minutes. THEN put the butter in.
  • Once butter is melted, add garlic and immediately start spooning/basting the melted butter continuously over the salmon for 1 1/2 minutes.
  • Once the salmon is cooked (~122°F) remove salmon and place on plate. Rest for 3 minutes.
  • Add lemon juice to the butter that is still in the pan. Spoon butter/lemon/garlic mixture over salmon.
  • Serve and enjoy!

Creamy Garlic Parmesan Pasta

Creamy Garlic Parmesan Pasta

Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup milk, or more, as needed
  • 2 tablespoons unsalted butter
  • 8 ounces uncooked angel hair pasta
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley leaves, for garnish

Steps

  1. Heat olive oil in a large pot over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
  2. Stir in chicken broth, milk, butter and uncooked pasta; season with salt and pepper, to taste.
  3. Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes. Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached, and feel free to add more cheese as well if you are a cheesy person!
  4. Serve immediately, garnished with parsley, if desired.

This pasta is DELICIOUS with chicken or shrimp sauteed in the Pastor Chef Cajun Seasoning. Season the shrimp or chicken with the seasoning, saute squash and zucchini (with A LOT of garlic salt and some black pepper), and mix with the pasta. If you are in a rush, pasta roni has a wonderful substitute to the homemade version!

The squash, zucchini, chicken/shrimp mixture with the pasta roni holds a very special place in my heart. It was the one recipe that my sister taught me before she passed away. It became a staple in our house early in mine and Sara's marriage, and it remains a staple to this day, though I have learned to make it from scratch. Ingredients

  • 1/3 cup sea salt
  • 2 tbsp garlic powder
  • 1 3/4 tbsp cayenne pepper
  • 1 1/2 tbsp ground black pepper
  • 1 tbsp chili powder
  • 2 1/2 tsp celery salt
  • 2 tsp ground mustard
  • 2 tsp sugar
  • 2 tsp onion powder
  • 1 1/2 tsp basil
  • 1 1/2 tsp sage
  • 1 1/4 tsp cornstarch
  • 1 tsp lemon peel
  • 1/2 tsp oregano
  • 1/2 tsp ground thyme
  • 1/2 tsp thyme leaves
  • 1/2 tsp smoked paprika
  • 1/4 tsp turmeric

Steps

  1. This makes roughly one cup of seasoning.
  2. Mix all ingredients well.
  3. Tastes great on seafood and chicken.
  4. If you are in a pinch and want a quick version of this seasoning (though it will not taste exactly the same), coat your meat with even amounts of seasoned salt and cajun seasoning, a little smoked paprika, and after cooking dust with fresh lemon zest.

Strawberry Spinach & Kale Salad with Seared Tuna & Balsamic Vinaigrette

Ingredients

  • Mixed Baby Spinach and Baby Kale
  • Sliced Strawberries
  • Feta Cheese
  • Tuna Steak
  • 2 tbsp Olive Oil
  • 1 tbsp Sesame Oil
  • 1 tbsp Lemon Juice
  • 1 tbsp Soy Sauce
  • Sea Salt
  • Freshly Ground Black Pepper
  • Balsamic Vinaigrette

Steps

  1. Marinate the tuna for at least an hour in the oils, lemon juice, and soy sauce.
  2. Heat pan with a glug of olive oil on high heat.
  3. Season the tuna with salt and freshly ground black pepper.
  4. Sear tuna on both sides for 2-3 minutes (depending on thickness), and dump the marinade into the pan while searing.
  5. Remove tuna when done cooking and set aside.
  6. Assemble plate with spinach and kale, sliced strawberries, and feta cheese.
  7. Slice the cooked tuna and set on top of salad.
  8. Drizzle with balsamic vinaigrette and enjoy!
  9. You can also include roasted pine nuts if you like nuts in your salad!
