Pepperoncini Pot Roast

Ingredients

  • 1 pot roast
  • 1 packet dry Italian seasoning mix
  • 1 can/bottle pepperoncinis
  • Olive oil
  • Carrots and potatoes (optional)

Steps

  1. Season all sides of the pot roast with dry Italian seasoning mix.
  2. Sear all sides of the pot roast in a hot pan in some oil.
  3. Place pot roast in crock-pot on high.
  4. Pour whole can/bottle of pepperoncinis and juice over the pot roast.
  5. Add carrots and potatoes (if using).
  6. Cook 4-5 hours.
  7. Serve and enjoy!

This pot roast dish is so incredibly simple, yet it is so juicy and delicious! Don't be afraid of all the peppers in this dish if you don't like spicy food. It is not too spicy...just the right amount. The only thing it really is is pure deliciousness.

Creamy Garlic Parmesan Pasta

Creamy Garlic Parmesan Pasta

Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup milk, or more, as needed
  • 2 tablespoons unsalted butter
  • 8 ounces uncooked angel hair pasta
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley leaves, for garnish

Steps

  1. Heat olive oil in a large pot over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
  2. Stir in chicken broth, milk, butter and uncooked pasta; season with salt and pepper, to taste.
  3. Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes. Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached, and feel free to add more cheese as well if you are a cheesy person!
  4. Serve immediately, garnished with parsley, if desired.

This pasta is DELICIOUS with chicken or shrimp sauteed in the Pastor Chef Cajun Seasoning. Season the shrimp or chicken with the seasoning, saute squash and zucchini (with A LOT of garlic salt and some black pepper), and mix with the pasta. If you are in a rush, pasta roni has a wonderful substitute to the homemade version!

The squash, zucchini, chicken/shrimp mixture with the pasta roni holds a very special place in my heart. It was the one recipe that my sister taught me before she passed away. It became a staple in our house early in mine and Sara's marriage, and it remains a staple to this day, though I have learned to make it from scratch. I know you will enjoy it as both Jaimie and I have!

Ingredients

  • Russet Potatoes
  • Garlic Salt
  • Black Pepper
  • Butter

Steps

  1. Preheat oven to 425F or prep your grill to medium heat.
  2. Scrub the potatoes to remove dirt.
  3. Poke holes in the potatoes with a fork or knife.
  4. Heat in microwave for 6 minutes. (Less or more time depending on the amount of potatoes and their size)
  5. Remove from microwave and place on a square of aluminum foil.
  6. Rub the end of a stick of butter over the entire outside of the hot potato. The entire skin should be coated in melted butter.
  7. Sprinkle a very generous amount of garlic salt over the entirety of the skin. Add coarsely ground black pepper.
  8. Place 1 tbsp of butter next to the potato then wrap the potato in aluminum foil.
  9. Bake or grill the potato(es) for 30 minutes to an hour. It depends on the size of the potato. (It is better to cook it a little long than to under cook it.)
  10. Remove from the aluminum foil and enjoy! You actually want to eat the skin of this baked potato, and it is delicious!
  11. Dress up your potato however you want. I like butter, sour cream, shredded cheese, salt and pepper, and chives!

This recipe is an original by my dad. He always grills his, and it pairs perfectly with grilled chicken or steak. It is easy and absolutely delicious! You would be a whole lot happier in life if you had the memories I do of backyard New York barbecue chicken and Teber's taters. You can at least make the taters for yourself and be somewhat happy...

Ingredients

  • 4 large potatoes
  • 3 Tbsp butter
  • 1/3 cup sour cream
  • 1 tsp chives
  • 1 tsp parsley
  • pinch of sage
  • salt and pepper, to taste
  • Garlic salt
  • Melted butter
  • Shredded cheese

Steps

  1. Bake potatoes at 450 degrees for an hour.
  2. Rub butter onto the outside of the hot potato. It will melt onto the skin as you rub it. Cover the buttered skin with garlic salt.
  3. Cut potatoes in half and scoop out the inside into a mixing bowl.
  4. Mix with other ingredients (minus the melted butter and shredded cheese) until fluffy.
  5. Replace the mix into the skins and brush them with melted butter.
  6. Bake at 400 degrees for 20 minutes.
  7. Sprinkle with shredded cheese and bake at 350 degrees until melted.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 tablespoon vanilla extract
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Steps

  1. In a large bowl, sift together the flour, baking powder, salt and sugar.
  2. Make a well in the center and pour in the milk, beaten egg, melted butter, and vanilla; mix until smooth.
  3. Heat a lightly oiled griddle or nonstick frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4-1/2 cup for each pancake.
  4. Brown on both sides and serve hot.
  5. (You can add ingredients, such as chocolate chips, to the batter, and you will get an extra special sweet treat!)

Ingredients

  • 1/3 cup sea salt
  • 2 tbsp garlic powder
  • 1 3/4 tbsp cayenne pepper
  • 1 1/2 tbsp ground black pepper
  • 1 tbsp chili powder
  • 2 1/2 tsp celery salt
  • 2 tsp ground mustard
  • 2 tsp sugar
  • 2 tsp onion powder
  • 1 1/2 tsp basil
  • 1 1/2 tsp sage
  • 1 1/4 tsp cornstarch
  • 1 tsp lemon peel
  • 1/2 tsp oregano
  • 1/2 tsp ground thyme
  • 1/2 tsp thyme leaves
  • 1/2 tsp smoked paprika
  • 1/4 tsp turmeric

Steps

  1. This makes roughly one cup of seasoning.
  2. Mix all ingredients well.
  3. Tastes great on seafood and chicken.
  4. If you are in a pinch and want a quick version of this seasoning (though it will not taste exactly the same), coat your meat with even amounts of seasoned salt and cajun seasoning, a little smoked paprika, and after cooking dust with fresh lemon zest.
