Quick, easy, and a tasty go-to for any occasion!
Ingredients
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup milk, or more, as needed
- 2 tablespoons unsalted butter
- 8 ounces uncooked angel hair pasta
- Salt and freshly ground black pepper, to taste
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley leaves, for garnish
Steps
- Heat olive oil in a large pot over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
- Stir in chicken broth, milk, butter and uncooked pasta; season with salt and pepper, to taste.
- Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes. Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached, and feel free to add more cheese as well if you are a cheesy person!
- Serve immediately, garnished with parsley, if desired.
This pasta is DELICIOUS with chicken or shrimp sauteed in the Pastor Chef Cajun Seasoning. Season the shrimp or chicken with the seasoning, saute squash and zucchini (with A LOT of garlic salt and some black pepper), and mix with the pasta. If you are in a rush, pasta roni has a wonderful substitute to the homemade version!
The squash, zucchini, chicken/shrimp mixture with the pasta roni holds a very special place in my heart. It was the one recipe that my sister taught me before she passed away. It became a staple in our house early in mine and Sara's marriage, and it remains a staple to this day, though I have learned to make it from scratch.
